Fragrant kaffir limes hollowed and filled with sorbet for a bold citrus dessert that’s naturally refreshing, dairy-free and easy to make ahead.
These kaffir lime sorbet cups use hollowed kaffir limes as the shell for a strongly aromatic citrus sorbet. The result is a small frozen dessert with a sharper flavor profile than standard lime sorbet.
The sorbet is made with kaffir lime pulp, sugar, glucose powder, and super neutrose. The stabilizers help the texture stay smoother and make it easier to pipe into the shells after freezing.
Freezing the lime shells before filling helps the sorbet set quickly and keeps the shape cleaner during assembly. Leaving space at the top also makes it easier to replace the lids neatly.
These cups work well as a small dessert, a palate cleanser, or part of a warm-weather menu. Because they hold in the freezer well, they can be assembled in stages.

Freeze the kaffir lime shells until very firm so the sorbet sets quickly without melting.
Chill the sorbet base thoroughly before churning for a smoother, finer texture.
Do not overfill the limes—leave a little space so the tops sit neatly without squeezing out the sorbet.
For extra aroma, zest one kaffir lime into the pulp before blending.

Cut the tops off each kaffir lime about three-quarters up, keeping tops as lids.
Trim a thin slice from each base so limes stand upright.
Scoop out flesh carefully, reserve for the sorbet.
Freeze shells and tops for 2 hours until firm.
Heat the water until warm.
Mix sugar, glucose powder and neutrose; sprinkle into warm water.
Boil 1 minute to dissolve.
Pour over lime pulp and reserved flesh.
Chill 2 hours.
Blend smooth with immersion blender.
Churn 10–15 minutes in ice cream maker.
Freeze 2 hours until pipeable.
Fill a piping bag with a no. 4 fluted tip.
Pipe chilled sorbet into frozen lime shells.
Replace tops and serve immediately or freeze briefly to firm.
