Soft ube crinkles with a vivid purple color, a chewy center, and a crackled sugar coating that holds up well after baking.
Ube crinkles are at their best when the center stays soft and the outside sets just enough to hold a visible sugar crust. The chill time matters here because it helps the dough firm up, spread more slowly, and crack in a cleaner way.
This version leans on ube jam for body and flavor, then uses extra sugar coating for that classic snowy finish. The cookies are easy to portion ahead, which makes them useful for holiday baking or party trays.
Roll the dough first in white sugar, then in powdered sugar. That extra step keeps the surface from disappearing into the dough during baking and gives the finished cookies a clearer contrast.
Keep the baked cookies in an airtight container for several days. If you want to prep ahead, freeze the shaped dough balls and coat them just before baking.
The exact shade can vary depending on the ube jam and flavoring you use, so it is worth treating the dough texture as the more important cue. It should be soft enough to scoop, but firm enough after chilling to hold a rounded shape in the sugar.
These cookies are a good example of a dough that improves with patience. A proper chill makes shaping easier, but it also gives the flour time to hydrate so the centers bake with a more even, soft texture instead of spreading into flatter discs.
Because the sugar coating is such a visible part of the finish, bake the trays one at a time if your oven runs unevenly. That makes it easier to pull the cookies while the cracks are fully open and the interiors still feel a little underbaked in the middle.

Tried it with gluten-free flour and it still worked great. Just a bit more delicate when shaping. Thanks for the recipe!

Perfect texture! I chilled the dough overnight and the cracks came out beautifully. Will bake again for sure.
