You can prepare the soufflés in advance and bake them just before serving.
Only chocolate soufflés can be made ahead due to their thicker consistency.
Flavour the sugar used for dusting the moulds with cinnamon, dried orange zest, or vanilla sugar.

Brush ramekins with softened butter from bottom to top, avoiding circular motions.

They puffed up beautifully but collapsed a bit after serving. Still delicious though. Maybe I need to fill the moulds a bit more next time?
