Use well-chilled cream and bowl for easier whipping.

Split the vanilla bean and scrape out the seeds.
Melt the white chocolate with 100 ml cream in a bain-marie until smooth.
In a cold bowl, whip the remaining 500 ml cream with mascarpone, vanilla seeds, and icing sugar into Chantilly cream.
Fold the melted white chocolate into the whipped cream using a whisk.
Gently incorporate 80 g of dark chocolate shavings using a spatula.
Divide the mousse into ramekins and chill. Top with the remaining shavings before serving.
