Mini chocolate chip cookies with crisp edges and soft centers in bite-size form. Great for snack tins, lunch boxes, and make-ahead freezer baking.
These mini cookies are built for easy snacking rather than dramatic bakery size. The classic dough gives you the familiar buttery brown-sugar base, while the chocolate dough leans deeper and slightly more bittersweet because of the cocoa. Both stay small enough to feel bite-size, which makes them easy to portion and share.
The appeal is not just that they are smaller. It is that the texture changes a little too: mini cookies tend to give you more edge per bite, so you get a nice mix of crispness and softness if you bake them just right.
Brown sugar helps keep the cookies soft in the center.
White and dark chocolate give the two doughs different personalities without
making the process too complicated.
Cocoa powder gives the darker dough a cleaner chocolate flavor than melted
chocolate alone.
The small size makes these ideal for snack tins and lunch boxes.
Each dough uses a familiar cookie method: cream butter and sugar, add the egg, mix in the dry ingredients, and fold in the chocolate. Once shaped into small balls, they bake quickly because of the size.
You can bake both doughs on separate trays or one after the other. The key is not overbaking them. The cookies continue to set after they come out of the oven, so a slightly soft center is usually the right call.
Mini cookies are great for freezer baking because the dough balls thaw quickly and can often be baked straight from cold. Once baked, they keep well in an airtight container and are easy to grab in small portions.
If you are making them for packed lunches or snack jars, they hold up better than very large soft cookies because they are less fragile.
Can I bake them crunchier?
Yes. Leave them in for another minute or two if you want a firmer texture.
Why did mine spread too much?
The butter may have been too soft or the dough may have needed chilling.
Do I have to make both doughs?
No. Either dough can stand on its own.
Two mini cookies make a reasonable small portion, especially if they are part of a snack plate or packed lunch. Because it is easy to keep reaching for small cookies, portioning them out ahead of time usually works better than leaving the whole tray open.
These fit best as a small dessert, lunchbox treat, coffee break bake, or snack tin cookie. They are especially good when you want something sweet but not a full-size bakery cookie.
Pair a small portion with fruit, yogurt, or a more filling snack if you want a better-balanced afternoon treat. The cookie size makes moderation easier if you decide the portion before you start eating.
