Holiday oatmeal cookies are the kind of batch bake that works just as well for gift tins as they do for everyday snacks. The oats make them feel a little more substantial, while the brown sugar and cinnamon keep the flavor warm and soft rather than sharply sweet.
Raisins are the standard mix-in here, but dried cranberries work if you want a slightly brighter finish. Walnuts add crunch and help break up the chew from the oats.
Because the dough is straightforward and the bake time is short, this is a good cookie to keep around for quick holiday baking sessions.
Melted butter and brown sugar help the cookies stay soft in the center, but the main thing is not to leave them in the oven too long. They should still look a little soft in the middle when they come out.
Letting them cool on the tray also matters. That short rest gives the cookies time to finish setting without drying out.
Serve them once they are fully cool if you want the texture to settle. They are good on their own, but also fit into cookie platters with shortbread or butter cookies.
Store in an airtight container for up to 4 days, or freeze the dough in scooped portions for later baking.
These also make good gift cookies because they travel better than softer frosted bakes. If you are packing them, let them cool fully first so the centers set and the cookies do not steam inside the container.

Preheat the oven to 350°F (175°C).
In a mixing bowl, combine melted butter and brown sugar.
Add the egg, baking soda, and cinnamon powder. Beat until smooth.
Mix in the flour at low speed, or use a wooden spoon or spatula.
Stir in oatmeal, raisins or cranberries, and chopped walnuts until fully combined.
Scoop dough using an ice cream scooper, roll into balls, and place on a baking pan with space between.
Bake for 12–14 minutes.
Let cookies cool on the pan before transferring to a cooling rack.
