Fudgy chewy brownies need a little tension in the texture to feel right. The center should stay dense and moist, while the edges hold enough structure to give you a cleaner bite and better contrast.
This style leans toward a rich, compact crumb rather than a cakey bar. That makes it a good option when you want something that slices neatly for sharing but still tastes soft and chocolate-heavy in the middle.
They also hold up well after cooling, which makes them practical for bake sales, potlucks, and make-ahead desserts.
Once the batter is mixed, it helps to stop stirring as soon as the flour disappears. Extra mixing can add more air and push the texture closer to cake.
The other main point is baking time. Pulling the pan when the center still has a few moist crumbs keeps the brownies fudgy after they cool instead of dry and crumbly.

Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish.
Melt butter in a saucepan over medium heat.
Stir in sugar, eggs, and vanilla extract until fully combined.
In a separate bowl, mix flour, cocoa powder, baking powder, and salt, then gradually stir into the wet mixture.
Fold in chopped walnuts if using.
Spread the batter evenly in the prepared dish.
Bake for 20–30 minutes, until a toothpick comes out with a few crumbs.
Let cool before cutting into squares.
