To recreate Chef RV's recipe, you'll need:
- 1 cup or 120g pineapple juice, pear or apple juice
- 1 cup or 120g soy sauce
- 1/2 cup or 50g brown sugar
- 1/2 cup or 60g oyster sauce
- 1 tablespoon white vinegar
- 1/4 teaspoon black pepper
- 1 tablespoon minced garlic
- 1.5 tablespoons minced ginger
- 500g chicken breast, cut into bite-sized chunks
- Oil for shallow frying

- To make the marinade, combine pineapple juice, soy sauce, brown sugar, oyster sauce, vinegar, pepper, garlic, and ginger in a blender. Blend until smooth.
- Marinate the chicken chunks with half of the marinade or just enough to soak the chicken. Marinade for up to 2 days or minimum 30 minutes before cooking.
- Thicken the remaining sauce over a pan by boiling it for around 5 minutes. The sugar will caramelise and will slightly thicken the sauce.
- Heat the oil and shallow fry the marinated chicken breast until golden. Alternatively, use a grill or even bake in the oven.
- Serve with rice or egg noodles, green onions, buttered cabbage, and the thickened sauce.
