Chef's Tips
- Make sure the puff pastry is very cold for easier folding and better layers. 
- Store unbaked palmiers in the fridge if not baking immediately.

Preparation
- 1Sprinkle sugar on the work surface and place cold puff pastry on top. Flip and sprinkle more sugar and cinnamon over the surface. 
- 2Fold the pastry lengthwise inward from both sides to meet in the center, repeating in three stages to create layered folds. 
- 3Cut the folded dough into two logs, then slice each into 2 cm pieces. 
- 4Arrange palmiers in a staggered pattern on a non-stick baking tray without parchment or grease. 
Baking
- 1Preheat the oven to 180°C (356°F). 
- 2Bake for 20 minutes until golden and caramelized. 
- 3Transfer to a cooling rack and let cool completely before serving.
