Make sure the puff pastry is very cold for easier folding and better layers.
Store unbaked palmiers in the fridge if not baking immediately.

Sprinkle sugar on the work surface and place cold puff pastry on top. Flip and sprinkle more sugar and cinnamon over the surface.
Fold the pastry lengthwise inward from both sides to meet in the center, repeating in three stages to create layered folds.
Cut the folded dough into two logs, then slice each into 2 cm pieces.
Arrange palmiers in a staggered pattern on a non-stick baking tray without parchment or grease.
Preheat the oven to 180°C (356°F).
Bake for 20 minutes until golden and caramelized.
Transfer to a cooling rack and let cool completely before serving.
