This no-bake mango royale float is a classic Filipino-style icebox cake made with graham crackers, sweetened cream, and ripe mangoes. The layers soften in the fridge into a sliceable, creamy dessert that is perfect for warm weather.
Whipping the cream before folding in condensed milk gives the filling body without gelatin. Layering whole graham crackers keeps assembly quick while the chill time allows the cake to set and the flavors to meld.
Use ripe mangoes for natural sweetness and aroma. Graham crackers provide the structure, and the cream mixture binds everything together with a light, fluffy texture.
Build the dessert in a dish by layering graham crackers, cream, and mangoes. Finish with a smooth cream layer and fresh mango on top. Refrigerate until the layers soften and the cake slices cleanly.
