A deep caramel ice cream balanced with salt for a smooth, eggless scoop that tastes rich without becoming cloying.
A strong caramel base gives this flavor its character. The sugar should be taken far enough to develop bitterness and depth, then balanced with dairy and salt so the final scoop tastes complex rather than simply sweet.
Salt is not just an accent here. It is what sharpens the caramel and keeps the finish from feeling heavy or sticky.
Because caramel can dominate quickly, the texture needs to stay smooth and the seasoning needs to be measured. Too much salt or too pale a caramel changes the entire flavor direction.
This is one of the easiest flavors to serve on its own, but it also pairs well with apple desserts, brownies, toasted nuts, or espresso.

Use a heavy-bottomed saucepan to prevent burning the caramel.
Stir constantly once sugar melts—caramel can go from golden to burnt quickly.
Chill the base thoroughly before churning for the smoothest texture.

In a medium saucepan, combine sugar and water over medium heat.
Cook without stirring until sugar melts and turns a deep amber, swirling pan occasionally.
Carefully whisk in the cream (it will bubble vigorously). Stir until smooth.
Add milk and corn syrup to the caramel, bring to a rolling boil for 4 minutes.
In a small bowl, mix 2 tbsp milk with cornstarch to make a slurry.
Remove caramel mixture from heat, whisk in the cornstarch slurry, then return to a boil for 1 minute until thickened.
In a separate bowl, whisk softened cream cheese and salt until smooth.
Slowly whisk the hot caramel mixture into the cream cheese until fully blended.
Chill the mixture quickly in an ice bath for 30 minutes.
Pour chilled base into an ice cream maker and churn until thick and creamy.
Transfer to a container, press parchment against the surface, and freeze at least 4 hours before serving.
