Chef's Tips

  • Use a heavy-bottomed saucepan to prevent burning the caramel.

  • Stir constantly once sugar melts—caramel can go from golden to burnt quickly.

  • Chill the base thoroughly before churning for the smoothest texture.

Caramel Base

Instructions

Make the Caramel

  1. 1

In a medium saucepan, combine sugar and water over medium heat.

  2. 2

Cook without stirring until sugar melts and turns a deep amber, swirling pan occasionally.

  3. 3

Carefully whisk in the cream (it will bubble vigorously). Stir until smooth.

Cook the Base

  1. 1

Add milk and corn syrup to the caramel, bring to a rolling boil for 4 minutes.

  2. 2

In a small bowl, mix 2 tbsp milk with cornstarch to make a slurry.

  3. 3

Remove caramel mixture from heat, whisk in the cornstarch slurry, then return to a boil for 1 minute until thickened.

Combine & Chill

  1. 1

In a separate bowl, whisk softened cream cheese and salt until smooth.

  2. 2

Slowly whisk the hot caramel mixture into the cream cheese until fully blended.

  3. 3

Chill the mixture quickly in an ice bath for 30 minutes.

Churn & Freeze

  1. 1

Pour chilled base into an ice cream maker and churn until thick and creamy.

  2. 2

Transfer to a container, press parchment against the surface, and freeze at least 4 hours before serving.

Salty Caramel Ice Cream

Salty Caramel Ice Cream

A strong caramel base gives this flavor its character. The sugar should be taken far enough to develop bitterness and depth, then balanced with dairy and salt so the final scoop tastes complex rather than simply sweet.

Flavor Profile

Flavor Profile

Salt is not just an accent here. It is what sharpens the caramel and keeps the finish from feeling heavy or sticky.

Ingredient Highlights

Ingredient Highlights

Because caramel can dominate quickly, the texture needs to stay smooth and the seasoning needs to be measured. Too much salt or too pale a caramel changes the entire flavor direction.

Serving Notes

Serving Notes

This is one of the easiest flavors to serve on its own, but it also pairs well with apple desserts, brownies, toasted nuts, or espresso.

What Gives The Caramel Depth

What Gives The Caramel Depth

The base only works if the sugar is taken far enough to develop a little bitter edge before the dairy goes in. That deeper caramel note is what keeps the final ice cream from tasting like plain sweet cream with extra sugar.

Salt also needs to be treated as part of the structure rather than a garnish. The right amount sharpens the caramel and makes the scoop feel more balanced, especially once it is fully frozen and slightly muted by the cold.

Texture Notes

Texture Notes

Caramel-based ice creams benefit from a smooth emulsion because even a small graininess stands out. Cooling the base properly before churning helps keep the texture clean and scoopable.

Serve it on its own or with simple accompaniments so the caramel remains the main flavor.

FAQs

How do I prevent the caramel from crystallizing?

Avoid stirring once the sugar dissolves. Instead, gently swirl the pan and brush down the sides with a wet pastry brush if crystals form.

Can I make this without corn syrup?

Yes, substitute glucose syrup or honey, but texture may be slightly less scoopable.
