Instructions

Make the Brittle

  1. 1

Line a baking sheet with parchment.

  2. 2

Melt sugar in a saucepan over medium heat until golden amber.

  3. 3

Stir in butter, salt, and almonds, coating evenly.

  4. 4

Spread mixture thinly on parchment and cool completely. Break into small shards.

Cook the Base

  1. 1

In a saucepan, brown the butter until nutty and golden. Set aside.

  2. 2

Mix 2 tbsp milk with cornstarch in a small bowl to make a slurry.

  3. 3

In another bowl, whisk softened cream cheese with salt until smooth.

  4. 4

In a medium saucepan, combine remaining milk, cream, sugar, and corn syrup. Bring to a rolling boil for 4 minutes.

  5. 5

Remove from heat, whisk in the cornstarch slurry, then return to boil for 1 minute until slightly thickened.

  6. 6

Slowly whisk the hot mixture into the cream cheese, then stir in the browned butter.

Chill & Churn

  1. 1

Chill base quickly in an ice bath for 30 minutes.

  2. 2

Pour chilled base into an ice cream maker and churn until thick and creamy.

  3. 3

Fold in almond brittle pieces at the end of churning.

  4. 4

Transfer to a container, press parchment against the surface, and freeze at least 4 hours.

Brown Butter Almond Brittle Ice Cream

Brown Butter Almond Brittle Ice Cream

Brown butter gives this flavor its identity. It makes the base taste toasted and slightly savory, which keeps the brittle from reading as simple candy mixed into sweet cream.

Flavor Profile

Flavor Profile

The brittle adds both texture and a concentrated almond note. It should be folded in late so the pieces stay crisp and distinct rather than dissolving into the base.

Ingredient Highlights

Ingredient Highlights

This is a richer scoop, so salt matters. Even a small amount keeps the butter and caramelized nut notes from feeling flat or heavy.

Serving Notes

Serving Notes

It is best served simply, either on its own or with espresso. Extra toppings usually distract from the toasted butter and brittle combination that makes the flavor work.

What Makes Brown Butter Worth Using

What Makes Brown Butter Worth Using

Brown butter changes the base more than a standard melted-butter addition would. It brings a toasted, almost savory note that helps the brittle taste integrated instead of like a separate candy stirred into sweet cream.

The brittle should go in late and in small shards so the scoop keeps some snap without turning into a block of frozen candy. That balance is what keeps the texture interesting from the first spoonful to the last.

Storage And Variation Notes

Storage And Variation Notes

This ice cream pairs well with espresso, dark chocolate desserts, or simple poached fruit because the base is already rich and nutty. If you want to vary it, pecan or hazelnut brittle usually works just as well.

Keep parchment pressed against the surface in the freezer to limit ice crystals and protect the brittle pieces from softening too quickly.

FAQs

Can I use other nuts instead of almonds?

Yes! Pecans, hazelnuts, or peanuts all make excellent brittle for folding into the ice cream.

How do I keep the brittle crunchy?

Add the brittle pieces at the very end of churning and press parchment against the surface to keep moisture out during freezing.
