A nutty ice cream with toasted brown butter notes and shards of almond brittle for a rich, crunchy finish.
Brown butter gives this flavor its identity. It makes the base taste toasted and slightly savory, which keeps the brittle from reading as simple candy mixed into sweet cream.
The brittle adds both texture and a concentrated almond note. It should be folded in late so the pieces stay crisp and distinct rather than dissolving into the base.
This is a richer scoop, so salt matters. Even a small amount keeps the butter and caramelized nut notes from feeling flat or heavy.
It is best served simply, either on its own or with espresso. Extra toppings usually distract from the toasted butter and brittle combination that makes the flavor work.

Toast the almonds before making the brittle for deeper flavor.
Spread the brittle thinly so it shatters easily when frozen.
Fold in brittle chunks at the very end of churning for maximum crunch.

Line a baking sheet with parchment.
Melt sugar in a saucepan over medium heat until golden amber.
Stir in butter, salt, and almonds, coating evenly.
Spread mixture thinly on parchment and cool completely. Break into small shards.
In a saucepan, brown the butter until nutty and golden. Set aside.
Mix 2 tbsp milk with cornstarch in a small bowl to make a slurry.
In another bowl, whisk softened cream cheese with salt until smooth.
In a medium saucepan, combine remaining milk, cream, sugar, and corn syrup. Bring to a rolling boil for 4 minutes.
Remove from heat, whisk in the cornstarch slurry, then return to boil for 1 minute until slightly thickened.
Slowly whisk the hot mixture into the cream cheese, then stir in the browned butter.
Chill base quickly in an ice bath for 30 minutes.
Pour chilled base into an ice cream maker and churn until thick and creamy.
Fold in almond brittle pieces at the end of churning.
Transfer to a container, press parchment against the surface, and freeze at least 4 hours.
