Roasting the strawberries changes the flavor from fresh and watery to deeper and more jam-like, which helps them hold their identity once folded into frozen dairy.
Buttermilk adds acidity and keeps the scoop from tasting like simple strawberry cream. That tang is what gives the flavor its freshness.
The balance between fruit reduction and dairy is important. Too little fruit and the result tastes generic; too much wet fruit and the texture suffers.
This is a strong warm-weather flavor that pairs well with biscuits, shortcake, or plain wafers. It is one of the more refreshing fruit-based ice creams in the group.

Roast the strawberries until caramelized to intensify their flavor.
Add buttermilk after cooking the base to keep its tang bright and fresh.
For extra fruitiness, fold in diced roasted strawberries at the end of churning.

Preheat oven to 190°C (375°F).
Spread strawberries on a baking sheet, sprinkle with sugar, and roast for 8–10 minutes until soft and syrupy.
Puree or mash the roasted strawberries and cool completely.
In a small bowl, whisk 2 tbsp milk with cornstarch to make a slurry.
In another bowl, whisk softened cream cheese with salt until smooth.
In a saucepan, combine remaining milk, cream, sugar, and corn syrup. Bring to a rolling boil for 4 minutes.
Remove from heat, whisk in cornstarch slurry, then return to boil for 1 minute until slightly thickened.
Slowly whisk hot mixture into the cream cheese until smooth.
Stir roasted strawberry puree and buttermilk into the cooled base.
Chill mixture quickly in an ice bath for 30 minutes.
Pour into an ice cream maker and churn until thick and creamy.
Transfer to a container, press parchment against the surface, and freeze at least 4 hours.
