Blanch tomatoes in boiling water, peel, and deseed.
Combine tomato flesh with sugar, lemon juice, vanilla, and salt; let rest for 2 hours.
Strain and cook the liquid until it thickens, then add tomato flesh to form a smooth caramel.
Mix egg yolks, sugar, butter, flour, and baking powder into a dough.
Roll and cut into a 16 cm circle. Bake at 180°C (350°F) for 15 minutes.
Spread a thin layer of tomato caramel over the cooled base.
Skewer cherry tomatoes.
Cook sugar to a golden caramel, dip tomatoes to coat, and let crystallize.
Whip cream with icing sugar until soft peaks form.
Pipe elegantly using a Saint-Honoré nozzle on the sablé.
Arrange caramel-dipped tomatoes around the sablé.
Pipe Chantilly cream in decorative swirls.
Top with a single cherry tomato d’Amour at the center.
