This version leans on a starch coating and a double fry to build crunch before the wings are tossed. That matters because once the sauce hits, any weak crust disappears quickly.
Blue cheese dip is the classic pairing for a reason. It gives the plate a cool, salty counterpoint and makes the wings feel more complete, especially when you serve them with celery or carrot sticks.
The main thing is to fry in stages and keep the oil hot enough on the second pass. That extra fry helps drive off moisture so the wings can hold up better after saucing.
It also helps to toss the wings in warm sauce right before serving instead of letting them sit. Buffalo wings are at their best when the crust is still loud and the sauce is just clinging to the surface.

In a large mixing bowl, combine chicken wings, fish sauce, lime juice, and black pepper.
Add cornflour and mix well. Let marinate for 30 minutes.
Coat each chicken wing in cassava or potato starch.
Heat oil in a deep fryer or heavy-bottomed pot to 190°C (375°F).
Fry the wings for about 10 minutes, then drain on paper towels.
Double fry for an additional 2–3 minutes for extra crispiness.
Melt butter in a saucepan.
Add ketchup, hot sauce, and honey. Stir well to combine.
Toss the fried wings in the buffalo sauce until fully coated.
Mix blue cheese, mayonnaise, and double cream until smooth.
Serve wings with the blue cheese dip and vegetable sticks.
