This frozen yogurt version leans into tang more than richness, which makes the berry swirl feel sharper and more refreshing than in a standard ice cream base. The crisp element keeps it from tasting one-note once frozen.
The berry component should read jammy and concentrated, not watery. That keeps the ribbons distinct and prevents the frozen yogurt from turning icy around the swirl.
Because yogurt brings acidity, sweetness needs to be just high enough to round the berries and support scoopability. The crumble adds the toasted note that ties the whole flavor together.
It works well as a warmer-weather dessert when you want something fruity but not heavy. For serving, keep the crumble layered rather than mixed aggressively so the texture contrast stays noticeable.

Roast the berries lightly before swirling for a deeper jammy flavor.
Bake the oat streusel until golden and crisp so it stays crunchy in the frozen yogurt.
Layer the swirl instead of mixing fully for the best visual effect.

Simmer blackberries, blackcurrants, sugar, and lemon juice until thick and jammy.
Cool completely before layering into frozen yogurt.
Mix oats, brown sugar, and melted butter.
Spread on a baking tray and bake at 180°C (350°F) for 10–12 minutes until golden.
Cool until crisp.
Whisk 2 tbsp milk with cornstarch to form a slurry.
In another bowl, whisk softened cream cheese and salt until smooth.
In a saucepan, combine remaining milk, cream, sugar, and corn syrup.
Bring to a rolling boil for 4 minutes, then whisk in cornstarch slurry.
Return to boil for 1 minute until thickened.
Slowly whisk hot mixture into cream cheese, then stir in Greek yogurt.
Chill base in an ice bath for 30 minutes.
Churn in an ice cream maker until creamy.
Layer churned frozen yogurt with brambleberry swirl and crisp topping.
Freeze for at least 4 hours before serving.
