Prawn tempura looks dramatic on a platter, but the method is mostly about restraint. A cold batter, hot oil, and brief frying time are what keep the coating thin and crisp instead of heavy.
This version keeps the process straightforward enough for a home kitchen while still giving you that delicate shell around sweet, juicy prawns. The dipping sauce is simple and salty-sweet, with enough ginger and daikon to freshen each bite.
Serve the tempura as soon as it leaves the oil for the best texture. It works well as a starter with shredded cabbage, steamed rice, or a small bowl of noodle soup on the side.
If you want to stretch the batch, the same batter can coat sliced sweet potato, mushrooms, green beans, or onion wedges. Just fry vegetables separately so the seafood stays clean-tasting.
Tempura is best eaten immediately, but leftovers can be reheated briefly in a hot oven or air fryer to recover some crispness. Store the dipping sauce separately and chill it for up to 2 days.
The batter should be mixed just before frying, not held for too long. As it sits it loses some of the cold shock that helps tempura fry up light, and the coating can turn flatter and less delicate.

Combine cake flour, cornstarch, iodized salt, sugar, and baking powder in a bowl.
Gradually add ice cold water, mixing until the consistency resembles crepe batter.

Dip prawns into the batter and deep fry until golden brown.
In a bowl, mix soy sauce, water, mirin, sugar, grated ginger, and grated daikon.
