Chill cream cheese frosting slightly before piping for stability.
Use two spatulas to transfer cake layers safely.

Preheat oven to 175°C and line a cake tin.
Whisk eggs with sugar until dissolved, then mix in oil.
Combine flour, almond flour, cinnamon, baking powder, baking soda, and salt.
Fold dry ingredients into the egg mixture.
Add grated carrots, rum-soaked raisins, and chopped nuts, folding gently.
Pour batter into tin, tap to remove air bubbles, and bake 40–45 minutes.
Remove cake from oven, cool slightly, then unmold onto rack.
Let cool completely and slice into three equal layers.
Beat cream cheese until smooth, then separately beat butter until light.
Gradually mix butter into cream cheese.
Add powdered sugar, lemon zest, heavy cream, and vanilla.
Chill frosting for 10–15 minutes until firm enough for piping.
Place one cake layer on a turntable and pipe frosting.
Repeat with remaining layers and finish with frosting on top.
Decorate with herbs or sugar flowers as desired.
