French Pistachio Macarons are built around a cleaner, deeper nut flavor rather than a sweet bakery-style filling. The shells use an Italian meringue method for stability, and the ganache relies on pistachio paste and white chocolate to create a filling that stays smooth without becoming too heavy.
This is the kind of macaron recipe that rewards accuracy and patience. The components are not especially complicated on their own, but the texture depends on careful folding, drying, baking, and maturation.
The Italian meringue gives the shells a more controlled structure, which helps when you want a smooth finish and a reliable foot. It is still possible to overmix or undermix the batter, but the method gives the recipe a stronger base than a looser approach.
The pistachio ganache also stays focused because the pistachio paste is not fighting with too many extra flavors. Bitter almond extract is only there to support the nut profile, not to dominate it.
The shells use almond flour, icing sugar, egg whites, and Italian meringue, with color added for the classic pistachio look. The ingredients are familiar, but the method is what makes them behave properly.
For the filling, white chocolate gives the ganache body, while cream and pistachio paste keep it pipeable and rich. Using a good pistachio paste matters more than adding extra flavorings.
Start by preparing the shell mixture and Italian meringue separately, then fold them together until the batter is smooth enough to pipe but not runny. Pipe the shells evenly and let them crust before baking so they develop the proper foot.
Make the pistachio ganache while the shells cool, then let it firm up before piping. Once the macarons are filled, refrigerate them for a full maturation period before serving so the shells soften slightly and the texture settles.
Use pistachio paste with as little added sugar as possible if you want the filling to taste more nutty than sweet. If your kitchen is warm, chill the ganache well before piping so it holds cleanly.
Macarons are best after maturing in the fridge for about 24 hours, and they can be held chilled for several days in an airtight container. Bring them back to room temperature before serving for the best texture.

Allow the macarons to mature for 24 hours in the fridge for the best texture.

Sift the icing sugar with the almond flour.
Mix the food colorings into the first batch of egg whites and pour over the almond-sugar mixture without stirring.
Prepare an Italian meringue - boil water and sugar to 118°C. Start whisking the second batch of egg whites when the syrup reaches 115°C.
Pour the cooked sugar over the whipped egg whites while whisking, and cool to 50°C.
Gently fold the meringue into the almond mixture to create a smooth batter.
Pipe 3.5 cm rounds onto parchment-lined baking sheets, spacing 2 cm apart.
Tap the sheets to flatten slightly and remove air bubbles.
Let shells dry (crust) for at least 30 minutes at room temperature.
Preheat a convection oven to 180°C (356°F).
Bake for 12 minutes, briefly opening the oven door twice during baking to release moisture.
Slide the baking paper onto the countertop immediately after baking to cool.
Melt the chopped white chocolate to 45–50°C in a bain-marie or microwave.
Bring the cream to a boil with the pistachio paste and bitter almond extract.
Gradually pour the hot cream over the melted chocolate in three additions, stirring from the center outwards.
Blend with an immersion blender until smooth.
Pour into a shallow dish, cover with plastic wrap touching the surface, and refrigerate for 6 hours until creamy.
Fill a piping bag fitted with a plain No. 11 tip with the pistachio ganache.
Turn half the shells upside down and pipe a dollop of ganache onto each.
Top with the remaining shells and press gently.
Refrigerate the assembled macarons for 24 hours.
Bring to room temperature 2 hours before serving.

The ganache was smooth and piped well after resting. Good recipe if you want a more classic pistachio macaron rather than something overly sweet.

Very good shell texture from the Italian meringue method. I kept the lavender out of another batch and preferred this cleaner pistachio finish.

The pistachio flavor came through clearly without tasting like coloring or extract only. Maturing them overnight really helped the texture.
