Preheat the oven to 185°C (365°F). Grease a baking dish with butter.
Peel and slice the apples into 2 mm thick pieces, then cut into 0.5 cm sticks.
In a bowl, whisk together the brown sugar and egg. Gradually mix in the milk and flour in alternating portions.
Add the lemon juice, scraped vanilla bean, and bicarbonate of soda. Stir in the apple sticks.
Pour the batter into the prepared baking dish and smooth the top.
Mix the sugar, cinnamon, and melted butter. Pour this over the batter.
Bake for 40 minutes until golden and set. Let cool slightly before serving.
