Chef's Tips

  • Use gel colouring rather than liquid colouring so the macaron batter does not become too loose.

  • Reduce the cucumber juice before adding it to the ganache; this keeps the filling smooth and protects the shells from excess moisture.

  • Refrigerate the filled macarons for 24 hours, then let them sit at room temperature for 15 minutes before serving.

Macaron Shells

Approx. 501 g

Cucumber Mandarin Ganache

Instructions

Make the Cucumber Mandarin Ganache

  1. 1

Blend the cucumber until smooth, then strain it through a fine sieve. Simmer 60 g of the juice in a small saucepan until reduced to about 25 g; cool it to room temperature.

  2. 2

Put the white chocolate in a heatproof bowl. Heat the cream with the mandarin zest until steaming, then pour it over the chocolate. Leave for 1 minute and stir from the centre outward until smooth.

  3. 3

Blend in the reduced cucumber juice, mandarin juice, olive oil, and salt until glossy. Cover directly and chill for at least 4 hours, until thick enough to pipe.

Make the Macaron Shells

  1. 1

Sift the icing sugar and almond flour together. Whip the egg whites to foamy peaks, gradually add the caster sugar, and whisk to a stiff, glossy meringue. Beat in the gel colouring, if using.

  2. 2

Fold the almond mixture into the meringue in two additions. Continue folding until the batter flows from the spatula in a thick ribbon and settles back into itself within about 20 seconds.

  3. 3

Pipe 48 rounds, about 3.5 cm wide, onto baking-paper-lined trays. Tap the trays firmly, pop visible bubbles, and rest the shells for 30 to 45 minutes, until their tops no longer stick to a fingertip.

Bake and Fill the Macarons

  1. 1

Heat the oven to 150C (300F) conventional. Bake one tray at a time for 13 to 14 minutes, rotating once, until the shells have feet and release from the paper after cooling completely.

  2. 2

Pair similar-size shells. Pipe or spoon the chilled ganache onto half the shells, sandwich with the rest, and refrigerate in an airtight container for 24 hours before serving.

Cucumber Mandarin Macarons

Cucumber Mandarin Macarons

These cucumber mandarin macarons pair crisp almond shells with a white chocolate ganache that is fresh rather than overly sweet. Reduced cucumber juice brings a clean green note, while mandarin zest and juice provide the brightness that keeps the filling recognisably citrusy. The combination is unusual, but it is balanced: cucumber stays in the background and lets the mandarin lead.

The recipe uses a French-meringue method, which avoids hot sugar syrup and is well suited to a careful home baker. Plan ahead for the ganache chill and the overnight maturation after filling. Both rests matter: the first makes the ganache pipeable, while the second gives the shell its characteristic tender chew around the centre.

Why reduce cucumber juice for macaron ganache

Why reduce cucumber juice for macaron ganache

Cucumber is mostly water, so adding fresh juice directly to a white chocolate ganache can leave it loose or cause the filled macarons to soften too quickly. Blending, straining, and reducing a small quantity concentrates the flavour while keeping the liquid controlled. Cool the reduction fully before blending it into the ganache so the emulsion stays smooth.

Mandarin works particularly well with white chocolate because its fragrant zest adds aroma without the sharper bitterness of some citrus varieties. A little mild olive oil rounds the filling out, but it should be fruity and gentle rather than peppery or intensely grassy.

Getting smooth macaron shells

Getting smooth macaron shells

Macaronage is the stage that determines whether the shells spread evenly. After the sifted almond flour and icing sugar are folded into the meringue, lift the batter with the spatula. It should fall in a thick continuous ribbon, then gradually settle into itself. A batter that is too stiff leaves pointed tops; one that is too loose spreads into flat discs.

Pipe all the rounds to a similar size and tap the tray firmly on the counter. This releases large air bubbles, which you can pop with a toothpick. Let the shells rest until their surfaces are dry to the touch before baking. That dry skin directs the expanding air downward and helps create the characteristic ruffled feet.

Baking and filling tips

Baking and filling tips

Oven temperatures vary, so bake a small test tray first if you are unsure. The shells are ready when their tops do not wobble separately from the feet and they release from the paper once completely cool. Do not force warm shells off the tray; they can tear at the base.

Pipe a modest round of cold ganache in the centre of each shell and press the pair together gently. The filling should reach close to the edge without being squeezed out. Once assembled, store the macarons airtight in the refrigerator for a full day; this gives the shells time to soften slightly while staying intact.

Storage and serving

Storage and serving

Keep filled cucumber mandarin macarons refrigerated for up to four days. Bring them out 15 minutes before serving so the ganache is creamy rather than firm. For longer storage, freeze the filled macarons in an airtight container for up to one month, then thaw them overnight in the refrigerator.

Portion Guidance for Goals

Portion Guidance for Goals

One macaron is a satisfying small dessert portion. The white chocolate ganache and almond shells make it rich, so serve one or two alongside fruit or after a lighter meal rather than stacking it with another rich dessert.

When to Eat

When to Eat

Serve these macarons with afternoon tea, after dinner, or as a planned sweet treat after a workout meal with enough protein and fruit.

Balance Tip

Balance Tip

Pair macarons with fresh citrus or berries and keep other high-saturated-fat desserts lighter that day if you are enjoying more than one.

FAQs

Do cucumber and mandarin work together in macarons?

Yes. The cucumber is reduced so it reads as a fresh, light note rather than a watery vegetable flavour, while mandarin zest and juice give the white chocolate ganache a clear citrus lift.

Why reduce the cucumber juice?

Reducing it concentrates the flavour and removes enough water for the ganache to set firmly. Using unreduced cucumber juice can make the filling loose and soften the macaron shells too quickly.

Can I make the macarons ahead?

Yes. Filled macarons benefit from 24 hours in the refrigerator, which lets the shells soften slightly around the ganache. Serve them after 15 minutes at room temperature for the best texture.

What if my macaron shells crack?

Cracks usually mean the shells did not dry long enough, the oven is too hot, or too much air remained in the batter. Rest until the tops are dry, tap out bubbles, and use an oven thermometer if possible.

The French-meringue shell method was manageable at home. I used a small amount of green gel colour and the shells kept clean, defined feet.

I was nervous about the cucumber in a macaron, but the ganache set well and the flavours became much clearer after the overnight rest.

The reduced cucumber juice was subtle but really fresh, and the mandarin zest stopped the white chocolate filling from tasting too sweet.
