This dessert uses thin caramelised arlette layers, raspberry preserves, and fresh berries for a crisp puff pastry dessert with a tart fruit filling. The contrast between the pastry and the raspberry layer is the main strength of the dish.
Arlettes are made by rolling sugared puff pastry into a log, slicing it, and pressing each piece thin before baking. This method creates flat, crisp layers with a caramelised surface and a light laminated texture inside.
Rolling the pastry evenly and baking it between parchment sheets helps control the shape and colour.
The raspberry filling is cooked with sugar, raspberry juice, glucose powder, pectin NH, and tartaric acid. This gives the preserves a texture that is firm enough to spread without running into the pastry layers too quickly.
The tart fruit flavour helps balance the sweetness of the caramelised pastry.
Once the arlettes are cool:
Assemble shortly before serving so the pastry stays crisp.
These arlette sandwiches can be served on their own or with creme fraiche, a light syrup, or fruit sorbet.

Make a classic puff pastry with six turns, using the listed beurre manié and détrempe ingredients.
Roll the finished dough to 2 mm thickness and refrigerate until firm.
Brush the puff pastry lightly with water on both sides.
Coat evenly with superfine sugar and roll into a cylinder.
Freeze for 1 hour.
Preheat oven to 170°C (340°F).
Slice into 1 cm strips, place on parchment, cover with another sheet, and roll to 3 mm thickness.
Bake for 25 minutes until deeply caramelised.
Heat sugar and raspberry juice to 115°C.
Add raspberries and cook until they release juices.
Add glucose powder, pectin NH, and tartaric acid.
Cook to 104°C, then remove from heat and cool.
Spread one arlette layer with raspberry preserves.
Arrange fresh raspberries around the edges.
Top with a second arlette to finish.
