A Light and Airy French Summer Roulé 🍓✨

When summer arrives, there’s nothing more satisfying than a dessert that feels both fresh and delicate. This Biscuit Roulé aux Fraises, Chantilly Légère captures the essence of the season with its cloud-soft sponge, fluffy strawberry-kissed cream, and juicy fresh berries. It’s the kind of classic French treat that looks impressive yet feels wonderfully effortless — perfect for warm evenings, garden gatherings, or a simple weekend indulgence.

What Makes This Roulé Special ☁️🍓

This roulade stands out because every component is designed for lightness. The sponge is baked thin and airy, making it easy to roll without cracking. The Chantilly is enriched with mascarpone for stability while staying ultra-soft thanks to chilled cream and fresh strawberry purée. Together, they create a harmony of fruitiness and creaminess that never feels heavy.

The diced strawberries inside add bursts of freshness in every bite, while the optional strawberry jam glaze turns the roulade into a glossy showpiece worthy of any pâtisserie window.

Tips for a Perfect Roll Every Time 🌀

Rolling a sponge can feel intimidating, but this recipe is designed to help you succeed:

  • Keep the sponge flexible by inverting it onto a slightly damp towel right after baking.
  • Spread the Chantilly lightly — overfilling makes rolling harder and messier.
  • Chill the assembled roulé to help it set beautifully before slicing.
  • For extra elegance, finish with a thin strawberry jam glaze and fresh berries on top.

These small details transform a simple cake into a polished dessert.

The Flavours: Fresh, Fruity, and Not Too Sweet 🍓💗

With both puréed and diced strawberries in the filling, each slice bursts with natural berry aroma. The mascarpone-stabilised Chantilly keeps the profile clean and fresh, creating a dessert that feels light enough for hot days but still indulgent enough for celebrations.

Pair it with a glass of iced tea, sparkling lemonade, or even a chilled rosé for the perfect summer treat.

Why You’ll Love This Recipe 🌿

  • It’s quick — under 40 minutes from start to finish.
  • It uses simple ingredients but delivers elegant results.
  • The texture is soft, airy, and melt-in-the-mouth.
  • Ideal for summer picnics, birthdays, or afternoon snacks.

Whether you serve it with a glossy glaze or simply dusted with icing sugar, this roulé is the kind of dessert that disappears quickly from the plate.

Serving Suggestions 🍰

Slice into generous rounds to show off the swirl, arrange on a platter with fresh berries, or serve individually with a drizzle of strawberry coulis. However you present it, this roulé always draws attention.

A Summer Classic to Make Again and Again ☀️🍓

If you love fruit-forward desserts that feel both refined and comforting, this rolled cake will quickly become a favourite. Its balance of texture, colour, and flavour makes it a standout for any warm-weather gathering — or simply a sweet moment at home.

Enjoy each slice chilled, let the strawberries shine, and embrace the lightness of this beautiful French roulé. 💕🇫🇷

Instructions

Prepare Chantilly and Strawberries

  1. 1

Hull and blend 90g of strawberries into a fine purée.

  2. 2

In a cold bowl, briefly beat mascarpone. Gradually add cold cream and 65g sugar while whipping into soft peaks.

  3. 3

Gently fold in the strawberry purée. Chill the cream in the fridge.

  4. 4

Dice the remaining strawberries; reserve the base halves for decoration.

Make the Biscuit

  1. 1

Preheat oven to 210°C (410°F). Butter a silicone baking mat or parchment on a rimmed baking tray.

  2. 2

Beat whole eggs, yolks, and 135g sugar until pale and thick (ribbon stage).

  3. 3

In another bowl, whip egg whites until foamy, then gradually add 85g sugar and beat until stiff peaks form.

  4. 4

Gently fold the two mixtures together, then add sifted flour with a spatula.

  5. 5

Spread the batter evenly into the tray. Bake for 8 minutes.

  6. 6

Invert onto a damp tea towel and carefully remove the baking mat. Trim edges into a rectangle.

Assemble the Roulé

  1. 1

Flip the sponge to the browned side facing down.

  2. 2

Spread an even layer of strawberry chantilly, followed by diced strawberries.

  3. 3

Roll up gently without pressing too hard. Chill to set the shape.

  4. 4

Optionally, warm strawberry jam and brush over the roll. Garnish with fresh strawberries or cut into slices to serve.
