Chill the bowl and cream before whipping for best results.
Optional: Glaze the roll with warm strawberry jam and top with sliced strawberries for extra shine and flavor.

Hull and blend 90g of strawberries into a fine purée.
In a cold bowl, briefly beat mascarpone. Gradually add cold cream and 65g sugar while whipping into soft peaks.
Gently fold in the strawberry purée. Chill the cream in the fridge.
Dice the remaining strawberries; reserve the base halves for decoration.
Preheat oven to 210°C (410°F). Butter a silicone baking mat or parchment on a rimmed baking tray.
Beat whole eggs, yolks, and 135g sugar until pale and thick (ribbon stage).
In another bowl, whip egg whites until foamy, then gradually add 85g sugar and beat until stiff peaks form.
Gently fold the two mixtures together, then add sifted flour with a spatula.
Spread the batter evenly into the tray. Bake for 8 minutes.
Invert onto a damp tea towel and carefully remove the baking mat. Trim edges into a rectangle.
Flip the sponge to the browned side facing down.
Spread an even layer of strawberry chantilly, followed by diced strawberries.
Roll up gently without pressing too hard. Chill to set the shape.
Optionally, warm strawberry jam and brush over the roll. Garnish with fresh strawberries or cut into slices to serve.
