Rich, egg-free pistachio gelato for the Ninja Creami Deluxe, made with real roasted pistachios blended into a smooth homemade paste.
Roast the pistachios until fragrant but not darkly browned; over-roasting can make the gelato taste bitter.
Process the warm nuts until glossy and fluid. Do not add water or milk, because the natural pistachio oils create the paste.
Freeze the base on a completely level surface for at least 16 hours, ideally 24 hours, for a more even first spin.
If the frozen surface domes, scrape off the raised centre before processing so the container sits level in the machine.

Spread the shelled pistachios on a baking tray and roast at 150C fan or 170C conventional for 8 to 10 minutes, until fragrant. Do not let them become dark brown.
Cool them slightly, then rub them gently in a clean kitchen towel to remove any loose skins. The skins do not need to be removed perfectly.
Process the warm pistachios continuously in a food processor, scraping the sides as needed, until they become as smooth and fluid as possible. Do not add water or milk.
Weigh 90 g of the finished pistachio paste for the gelato base. Reserve any extra paste for another use.
Whisk the caster sugar, milk powder, xanthan gum, and fine sea salt together in a small bowl.
Combine the whole milk, double cream, and glucose syrup in a saucepan. Heat gently to about 45 to 50C; do not simmer.
Gradually whisk in the dry mixture until smooth, then add the 90 g pistachio paste.
Continue heating and stirring until the base reaches about 70 to 75C. Do not boil it.
Remove from the heat and blend with an immersion blender for 30 to 60 seconds, until the pistachio oils are evenly emulsified.
Cool the base quickly in an ice bath, then refrigerate until fully chilled.
Pour the cold base into one Ninja Creami Deluxe container, keeping it below the MAX FILL line.
Freeze on a completely level surface for at least 16 hours, ideally 24 hours.
If the top domes during freezing, scrape off the raised section to flatten it before processing.
Run the frozen base on the Gelato programme.
If it looks powdery or crumbly, run one Re-Spin. If it is still dry, add about 15 ml whole milk to the centre and run one more Re-Spin.
For a crunchy pistachio finish, add the chopped roasted pistachios and run Mix-In once.
For a chocolate-pistachio finish, add the chocolate and run Mix-In once, or drizzle melted chocolate over the spun gelato and fold it through for finer flakes.

Everything you want to know about this recipe.
This egg-free pistachio gelato uses real roasted pistachios, blended into a smooth homemade paste before being emulsified into the dairy base. The method keeps the flavour focused on pistachio rather than chocolate or caramel, while the optional mix-in adds texture only at the end.
The recipe starts with 100 g shelled pistachios and uses about 90 g of the finished paste. A little processing loss is normal, and any extra can be saved for toast, porridge, or another dessert. The pistachios are roasted gently so they develop a deeper flavour without becoming bitter.
Pistachios become a smooth paste as their natural oils are released. Processing them patiently gives the base a more even texture than adding coarse ground nuts. Do not add water or milk while making the paste, because the added liquid can interfere with the nut oils and make the mixture seize.
The milk powder adds dairy solids and body, while glucose syrup helps the gelato remain more scoopable after freezing. Xanthan gum supports the emulsion in a very small quantity; too much can make the texture gummy. Blending the warm base helps distribute the pistachio oils through the milk and cream.
Cool the base completely before filling the container, then freeze it level for at least 16 hours. Twenty-four hours is the better target for a reliable first spin. If the frozen surface rises into a dome, scrape the raised centre flat before processing so the container sits evenly in the machine.
Run the Gelato programme first. If the result looks powdery or crumbly, use one Re-Spin before adding liquid. If it remains dry, add about 15 ml whole milk to the centre and run one more Re-Spin. Avoid adding milk automatically, since too much liquid can make the finished gelato soft.
Chopped roasted pistachios give the smooth base a clean crunch. Add them only after the gelato has spun and use Mix-In once. Chocolate can be added in the same way for a chocolate-pistachio version, or melted chocolate can be drizzled slowly over the freshly spun gelato and folded through for thin flakes.
Serve one small scoop or a portion of about 115 g. This is a rich nut-based dessert, and the nutrition estimate excludes the optional pistachio and chocolate mix-ins. Exact values vary with the pistachio variety, dairy brands, and the amount of paste recovered after processing.
Enjoy it as a planned dessert after a meal or after an active day. Pistachios are tree nuts, so label the dessert clearly and check with guests about allergies before serving.
The roasted pistachio flavour needs very little topping. Keep the portion modest and avoid combining it with other rich, high-saturated-fat desserts on the same day.
Store the gelato covered in the freezer and use it within about two weeks for the best texture. Let it stand for 5 to 10 minutes before scooping if it becomes firm. Re-spin only the portion you plan to serve where possible, since repeated processing can soften the remaining gelato.

A smooth paste distributes the pistachio oils more evenly through the dairy, giving the Deluxe container a more consistent and less grainy spin. It also gives the gelato a cleaner roasted-pistachio flavour.
Yes, if it is 100 percent pistachio and unsweetened. If you use a sweetened pistachio cream, reduce the caster sugar according to the product's sweetness or the gelato will be too sweet.
No. Remove the loose skins for a cleaner flavour and colour, but a small amount left behind will not prevent the paste or gelato from working.
Sixteen hours is the practical minimum, but 24 hours usually gives a more even freeze and a more predictable first spin in the Ninja Creami Deluxe.

How would you rate this recipe?
I followed the level-freezing step and scraped the dome before spinning. The texture was dense and creamy after one Re-Spin.
Processing the warm nuts takes patience, but the roasted flavour is much cleaner and more natural in the finished gelato.
I added chopped roasted pistachios at the end and liked keeping the base smooth while still getting some crunch.
The freshly roasted pistachios gave the gelato a deeper flavour than the jarred paste I had been using. One Re-Spin made it very smooth.
