Don’t overbeat the egg whites — medium peaks give the best rise.
Bake immediately once folded for the highest lift.
Serve straight from the oven; soufflés deflate quickly.

Preheat oven to 180°C (350°F).
Grease soufflé dish with softened butter using a pastry brush.
Sprinkle sugar evenly to coat the dish.
Bring 190ml (¾ cup) milk to a boil in a saucepan.
In a bowl, whisk flour, 60g sugar, and the remaining milk.
Whisk mixture into the hot milk and cook, stirring for 2 minutes until thickened.
Remove from heat, stir in butter, cover, and cool for 15 minutes.
Whisk in egg yolks until smooth.
Whip egg whites until soft peaks form.
Gradually add remaining sugar and beat until medium-firm peaks.
